Ingredients

1 pound thick cut bacon, cut into pieces*1 cup onion, chopped2 cans Red Gold® Original Diced Tomatoes + Green Chilies 10 oz, drained1/2 teaspoon red pepper flakes1 cup light brown sugar1 teaspoon ground dry mustard1 tablespoon apple cider vinegar1/2 teaspoon salt

Instructions

  • In a large skillet over medium-high heat, fry the bacon pieces until fat is rendered and pieces are very crispy.  Remove from heat and drain bacon on a paper towel lined plate. Drain all but 2 tablespoons of bacon grease.
  • To the skillet, add the onion and cook for about 6 minutes until onion has softened.
  • Add the bacon, drained diced tomatoes, red pepper flakes, brown sugar, dry mustard, apple cider vinegar, and salt.
  • Bring mixture up to a gentle boil, then reduce heat to a gentle low boil.
  • Continue cooking for 30-45 minutes. Stirring frequently until the mixture is very thick and syrupy.  Remove from heat. 
  • This can be served warm or cold.

*Place bacon in the freezer for 15-20 minutes to firm it up for easier cutting.
