Cilantro Pesto

2 handfuls of fresh cilantro leaves1/3 cup olive oil + more for drizzle1 jalapeno, seeded and diced2 garlic cloves, minced2 tablespoons fresh lime juice1-2 tablespoons Cotija or Parmesan cheese, grated2 teaspoons honeykosher salt to taste

Sandwich

1 pound Italian sausage2 tablespoons taco seasoning1 can Red Gold® Original Diced Tomatoes + Green Chilies 10 oz1/2 cup Red Gold® Mild Salsa 15.5 oz1/2 cup sour cream20 ounces pizza dough, store-bought or homemade1 1/2 cups Mexican cheese, shreddedtortilla chips, for toppingcilantro pesto, for toppinglettuce, for topping

Instructions

  • Preheat oven to 450°F.
  • Blend together ingredients for cilantro pesto then set aside.
  • Break up sausage and brown for 5-7 minutes then add the taco seasoning and can of Red Gold Original Diced Tomatoes + Green Chilies. 
  • Continue to cook the sausage mixture for another 5-7 minutes until the tomatoes have cooked down and start to coat the sausage.  Set aside to cool.
  • Next mix together the Red Gold Mild Salsa and sour cream for a creamy salsa sauce.
  • To make the pizza sandwiches, roll out 5 ounce portions of pizza dough into 8-10 inch rounds then coat with olive oil. Fold the pizza dough in half and drizzle with more olive oil. Bake for 10-15 minutes until cooked through and golden.
  • Carefully remove the pizza bread and when it is cool enough to handle, pull apart the bread and layer with 2-3 ounces of shredded cheese. Bake for another 2 minutes until the cheese is melted then remove from the oven.
  • Add cilantro pesto, taco seasoned Italian sausage, crushed tortilla chips, shredded lettuce, and creamy salsa as  desired to complete the sandwich.
