8 slices of 1/2 inch thick French bread1/4 cup plus 2 tablespoons olive oil, divided1 can Red Gold® Petite Diced Tomatoes 14.5 oz, drained5 basil leaves, chopped, save a bit for garnish1/2 red onion, diced2 tablespoons balsamic vinegarkosher salt and freshly ground pepper, to taste3 ripe smashed avocados
Instructions
- Preheat oven to broiler setting. Place slices of bread on a baking sheet and drizzle with the 2 tablespoons of olive oil. Broil slices in the oven for about 1-2 minutes on each side or until golden brown. Remove from the oven and set aside.
- In a medium bowl, combine Red Gold Petite Diced Tomatoes, basil, red onion, 1/4 cup olive oil, and balsamic vinegar. Season with salt and pepper to taste.
- Spread smashed avocado onto each slice of toast, then generously spoon the bruschetta on top. Garnish with fresh basil (or parsley) and serve immediately.
