A meatless pizza topped with black beans, spicy Petite Diced Tomatoes with Green Chilies, red onion, jalapeno, and two types of cheese that is ready in under 30 minutes. A new way to enjoy a family favorite that doesn't require a delivery tip. Recipe makes 2 pizzas, but can easily be divided in half for one.

Ingredients

2 (12 inch) pizza crusts, or your favorite pizza dough recipe, or store bought dough1 (15 ounce) can Red Gold® Chili Ready Crushed Tomatoes 15 oz1 (15 ounce) can black beans, rinsed and drained2 (14.5 ounce) cans Red Gold® Petite Diced Tomatoes with Green Chilies 14.5 oz, drained well1 cup red onion, thinly sliced2 jalapenos, seeds removed and sliced thin1 cup cliantro2 cups pepper jack cheese, shredded1 cup cheddar cheese, shredded4 ounces sour cream, about a 1/2 cuphot sauce, your favorite brand

Instructions

  • Preheat oven to 475º F
  • Place pizza dough or crusts on baking sheets or pizza stone
  • Spread half of the the crushed tomatoes over each crust, leaving a half inch border. Evenly divide the pizza toppings over the sauce on each pizza. Place in preheated oven and bake 10-15 minutes, or until cheese is golden brown and bubbly. You can bake both at once or one at a time. Depending on your oven, you may need to rotate pizzas at 5 minutes for even baking.
  • Remove from oven and let cool for 2-3 minutes, then garnish with sour cream and hot sauce.

Cooking Tip: To make the sour cream easier to drizzle, mix a couple of tablespoons of sour cream with a splash of water and stir. Add more water if needed until it can easily be drizzled over your pizza. You could also combine your hot sauce with the sour cream to make a spicy sour cream topping.

If meat is your thing, make a batch of taco meat and divide between the two pizzas, or make one meatless and one with taco meat!
