1 pound beef round chunks2 tablespoons sofrito1 teaspoon soy sauce1 teaspoon adobo seasoning1/2 teaspoon sazon seasoning1/2 teaspoon dried oreganojuice of 1/2 lime1 tablespoon olive oil1/2 teaspoon granulated sugar2 teaspoons Red Gold® Roasted Garlic Tomato Paste 6 oz3 cups water1/4 sliced onion1/4 sliced red bell pepper1/4 sliced green bell pepper

Instructions

  • In a large bowl, combine the beef chunks with sofrito, soy sauce, adobo, sazon, oregano, and lime juice. Mix well until the beef is fully coated with the seasonings.
  • Heat olive oil in a large pot over medium heat. Add the sugar and let it caramelize in the hot oil, stirring occasionally until it turns a golden brown.
  • Add the seasoned beef to the pot and cook, covered, for 15 minutes. Stir halfway through to ensure the beef browns evenly and absorbs all its juices.
  • Stir in the Red Gold Roasted Garlic Tomato Paste and 1 cup of water. Cover and cook for another 10 minutes until most of the liquid is absorbed.
  • Add another cup of water and cook for an additional 10 minutes, covered, until the liquid it mostly absorbed.
  • Stir in the sliced onion, red bell pepper, green bell pepper, along with the remaining 1 cup of water. Cover and cook for 10 more minutes, or until the sauce thickens and the vegetables are tender.
  • Enjoy with white rice, avocado and plantains.
