- In a large bowl, combine the beef chunks with sofrito, soy sauce, adobo, sazon, oregano, and lime juice. Mix well until the beef is fully coated with the seasonings.
- Heat olive oil in a large pot over medium heat. Add the sugar and let it caramelize in the hot oil, stirring occasionally until it turns a golden brown.
- Add the seasoned beef to the pot and cook, covered, for 15 minutes. Stir halfway through to ensure the beef browns evenly and absorbs all its juices.
- Stir in the Red Gold Roasted Garlic Tomato Paste and 1 cup of water. Cover and cook for another 10 minutes until most of the liquid is absorbed.
- Add another cup of water and cook for an additional 10 minutes, covered, until the liquid it mostly absorbed.
- Stir in the sliced onion, red bell pepper, green bell pepper, along with the remaining 1 cup of water. Cover and cook for 10 more minutes, or until the sauce thickens and the vegetables are tender.
- Enjoy with white rice, avocado and plantains.
