Chicken Tortas are my go-to family meals. They can also be filled with steak and pork. Tortas are essentially Mexican sandwiches that are filling and full of flavor. The best thing about tortas is you can change them up to your preferences and tastes.   @foodiemama1    @thefeedfeed

Ingredients

1 1/2 teaspoons chicken bouillon1 1/2 teaspoons garlic powder1 1/2 teaspoons onion powder1 1/2 teaspoons dried cilantro1 Tablespoon kosher salt4 boneless, skinless chicken breasts1 can Red Gold® Petite Diced Tomatoes 14.5 oz2 cans Red Gold® Original Diced Tomatoes + Green Chilies 10 oz8 torta bread or french rollsshredded cheese , for toppingsour cream, for toppingshredded lettuce, for toppingchopped onion, for topping

Instructions

  • In a pot bring 6 cups of water to a boil. Season the water with chicken bouillon, garlic powder, onion powder, dried cilantro and salt.  Add chicken breast and cook for 35 minutes (until fork tender).   Once the chicken is cooked, remove from pot and allow to cool for a few minutes before shredding.
  • In another pot, add 1 can of Red Gold Petite Diced Tomatoes and 2 cans of Red Gold Original Diced Tomatoes + Green Chilies.  Add shredded chicken to the pot.
  • Toast tortas on both sides brushed with olive oil.
  • Lastly, assemble tortas with cheese, chicken, sour cream, lettuce, and onion.
