Ingredients

1 tablespoon olive oil2 cups shredded cooked chicken, use rotisserie for convenience1 teaspoon Italian seasoning1 can Red Gold® Sweet Basil Tomato Paste 6 oz3 cups low-sodium chicken or vegetable broth1 pound uncooked gnocchi1 bay leafKosher salt to tastefreshly ground black pepper to taste5 oz fresh mozzarella, torn into piecesfresh parsley or basil, chopped to garnish

Instructions

  • Preheat broiler and position an oven rack 8 inches below the heat source.
  • Heat olive oil in a large skillet over medium heat. Add shredded chicken and Italian seasoning, cooking until fragrant and lightly browned.
  • Stir in Red Gold Sweet Basil Tomato Paste until chicken is fully coated. Gradually add the broth, stirring occasionally. Bring to a simmer.
  • Add gnocchi and bay leaf, and season with salt and pepper. Simmer for 2-3 minutes until gnocchi is tender.
  • Tear mozzarella into bite-sized pieces and scatter over the top. Broil for 5-7 minutes, until cheese is melted and bubbly.
  • Top with fresh parsley or basil and serve immediately.
