Ingredients

1/2 pound ground beef1 tablespoon taco seasoning1 can Red Gold® Mild Diced Tomatoes + Green Chilies 10 oz, drained well2 tablespoons Red Gold® Tomato Paste 6 oz2 refrigerated pie crusts1 cup shredded cheese, (cheddar, Monterey Jack or Mexican blend)1 large egg, beaten for egg wash

Instructions

  • In a skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up as it cooks.
  • Stir in the taco seasoning, Red Gold Mild Diced Tomatoes + Green Chilies, and Red Gold Tomato Paste until well combined. Let the mixture cook for another 2-3 minutes, then remove from heat.
  • Roll out the refrigerated pie crusts and cut them into small circles (about 4-5 inches in diameter).
  • Place 1 tablespoon of the beef mixture onto each dough round, then top with shredded cheese. Fold the dough over and pinch the edges shut using a fork to seal.
  • Place the empanadas on a lined baking sheet and brush the tops with egg wash for a golden finish.
  • Bake at 400°F for 20-25 minutes or until golden brown.
  • Let cool slightly, then serve with guacamole, queso, or your favorite dip.
