Ingredients

Sloppy Joes

3 1/2 cups cooked brown lentils2 tablespoons olive oil1 small yellow onion, chopped1 red bell pepper, seeded and chopped1 teaspoon garlic, grated or minced2 teaspoons fresh ginger, grated1 can Red Gold® Mild Diced Tomatoes + Green Chilies 10 oz2 tablespoons Red Gold® Roasted Garlic Tomato Paste 6 oz1/4 cup shoyu or soy sauce2 tablespoons sweet chili sauce1/4 cup dark brown sugar1/2 teaspoon toasted sesame oil

Slaw

1 bag slaw mix, 8 oz1 teaspoon granulated sugar1 tablespoon rice vinegar1/2 teaspoon kosher salt, to taste1 tablespoon chili crunch, to taste1/4 cup fresh chopped herbs, such as cilantro, mint or basil (optional)

Assembly

8 brioche bunsmayonnaise, for topping, optionalprepared slaw, for topping

Instructions

  • Prepare lentils as instructed on the package or rinse and drain if using pre-cooked lentils, set aside.
  • Heat olive oil in a large skillet. Add chopped onion and red bell pepper. Sauté for a few minutes until the onion is translucent.
  • Add garlic and ginger, cook for another 1-2 minutes.
  • Add Red Gold Mild Diced Tomatoes + Green Chilies, Red Gold Roasted Garlic Tomato Paste, shoyu, sweet chili sauce, brown sugar, and sesame oil.  Simmer covered for 5 minutes, then add lentils. 
  • Simmer for another 3-5 minutes until the Sloppy Joe mixture comes together and the flavors have melded. Adjust seasoning to taste.
  • Mix together the ingredients for the slaw and adjust seasoning as necessary.
  • Assemble Sloppy Joes on brioche buns with the prepared slaw and optional mayonnaise.
