Tomato Basil Soup

1 can Redpack® 28 oz Crushed Tomatoes in Puree1 (14.5 ounce) can chicken broth1/4 cup chopped fresh basil1 teaspoon salt2 teaspoon sugar1/2 cup whipping cream1/4 cup butter

Grilled Cheese Sandwich

2 tablespoons butter8 slices of whole grain bread, or bread of choice4 slices Gruyere cheese4 slices Cheddar cheese

Instructions

  • In a soup kettle, bring the crushed tomatoes and broth to a boil. Reduce heat; cover and simmer for 10 minutes.
  • Add basil, salt and sugar. Reduce heat to low, stir in cream and butter. Cook until butter is melted.
  • Melt 2 tablespoons butter in a non-stick skillet, over medium heat.  Arrange 8 slices of bread for assembly of sandwiches. Top 4 slices of bread with 1 slice of gruyere cheese, 1 slice of cheddar cheese and top with remaining slices of bread. Place assembled sandwiches into the melted butter.  Brown completely on one side and then turn and grill on second side, may need to add more butter. This method gives a better overall browning of the bread.
  • Cut sandwiches in half and serve alongside the tomato soup.
