Tex Mex Pasta Salad

Ingredients

  • 1 pound short pasta, cooked per package directions
  • 1/2 red onion, diced
  • 1/2 cup fresh cilantro, chopped
  • 1 ripe avocado, diced
  • 1 can of corn, 15 oz, drained
  • 1 can Red Gold Canned Petite Diced Tomatoes 14.5 oz, drained

  • 1 cup Red Gold Medium Salsa 15.5 oz

  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup lime juice
  • 3 tablespoons taco seasoning
  • 1/4 teaspoon kosher salt, more to taste

Instructions

Step one

In a large bowl, combine pasta, onion, cilantro and avocado.

Step two

Drain Red Gold Petite Diced Tomatoes and corn, add to the bowl.

Step three

To make the dressing, in a separate bowl combine Red Gold Medium Salsa, sour cream, mayonnaise, lime juice, taco seasoning and salt.

Step four

Whisk well, pour over salad and toss well.

Step five

Refrigerate a minimum of 30 minutes before serving.
