Spicy Tomato-Chile Chicken Flautas

These party-style chicken flauta bites are filled with a rich, slow-simmering tomato-chile chicken made with Red Gold Petite Diced Tomatoes and Red Gold Original Diced Tomatoes + Green Chilies for deep, balanced flavor. Ingredients

  • FOR THE CHICKEN
  • 3 tablespoon oil
  • 1/2 of white onion, diced
  • 1 can Red Gold Original Diced Tomatoes + Green Chilies 10 oz

  • 1 Red Gold Canned Petite Diced Tomatoes 14.5 oz

  • seasoning blend, recipe below
  • 3 chicken breasts
  • 2 teaspoons kosher salt
  • 2 teaspoons freshly ground black pepper
  • 4 bay leaves
  • 1 whole white onion, quartered
  • 4 garlic cloves, smashed
  • 1 cup chicken broth
  • 8 cups water, or more as needed for boiling chicken
  • 1/2 of white onion, thinly sliced

SEASONING BLEND (mix together)

2 teaspoons oregano

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon crushed red pepper flakes

1 ½ teaspoons chili powder

1 teaspoon kosher salt

1 teaspoon black pepper

FOR SERVING

16 corn tortillas

Shredded lettuce

Mexican crema

Limes or lime juice

Vegetable oil, for frying

Instructions

Tomato Sauce – Step One

In a large skillet, add 1 tablespoon of oil, the diced onion, both cans of Red Gold Tomatoes, and 2 teaspoons of the seasoning blend.

Step two

Cook over medium heat until the onion and tomatoes have reduced. Blend the tomato mixture and set aside.

Make the Chicken – Step One

In a large pot separate from the skillet, add the chicken breasts, salt, pepper, bay leaves, quartered onion, smashed garlic, chicken broth, and water. Boil for 30 minutes.

Step Two

Remove the chicken from the pot and shred it. A hand mixer can be used to shred chicken quickly. Season the shredded chicken with 2 teaspoons of the seasoning blend.

Step Three

In the skillet used to cook the tomatoes, add the thinly sliced onions, shredded chicken, and 2 tablespoons oil. Cook over medium heat until the onions are soft, about 3 minutes.

Step Four

Add the blended tomatoes to the chicken. Cover and simmer the chicken over low heat for 15 minutes.

Assembly – Step One

Wrap the corn tortillas in a damp paper towel or tea towel and microwave for 45 seconds.

Step Two

Place a tortilla flat on your cutting board and spread a dab of crema on the edge of the tortilla. This acts as glue. Spoon a generous amount of chicken onto the tortilla and roll tightly. Repeat with all the tortillas.

Step Three

In a clean skillet, pour in 1 to 1½ inches of oil and fry the flautas until golden and crispy.

Step Four

Serve the flautas on a bed of lettuce, drizzled with crema and finish with your favorite toppings.
