

Sticky, sweet, smoky bacon jam with with a little heat + crispy burger + chili crisp mayo. This is one of those recipes people ask you for after just one bite! @bartlowsbbq
Ingredients
- JALAPENO BACON JAM
- 1 lb bacon
- 1 sweet yellow onion, diced
- 1/4 cup Red Gold Mama Selita’s Jalapeno Ketchup 20 oz
- dash of diced jalapenos
- 1/2 cup brown sugar
- 1/3 cup maple syrup
- 1 tbsp Bartlows BBQ Sweet Red Dirt seasoning
- 1/3 cup apple cider vinegar
- BURGER SAUCE
- 1/2 cup may
- 1/2 cup chili crisp
- BURGERS
- 70/30 ground beef
- brioche buns
- cheddar cheese slices
Instructions
Step one
Cook the bacon in a skillet untill crispy. Remove and set aside, leaving the bacon grease in the pan. Add diced onions to the skillet and cook low and slow untill soft and caramalized.
Step two
Stir in Red Gold Mama Selita’s Jalapeno Ketchup, diced jalapenos, brown sugar, maple syrup and Sweet Red Dirt seasoning. Chop the cooked bacon and return to skillet. Simmer for 10-15 minutes untill thick, sticky and jammy.
Step three
Mix the mayo and chili crisp together in a bowl to form burger sauce. Refrigerate untill ready to serve.
Step four
Heat a griddle or cast iron skillet untill very hot. Roll ground beef into loose balls. Place on the hot surface and smash thin. Season lightly and cook untill crispy on the edges. Flip once, add cheddar cheese and cook untill melted.
Step five
Toast the brioche buns. Spread chili crisp sauce on the buns. Add the cheesy smash burger patties. Top with a generous spoonfull of jalapeno bacon jam. Serve hot and enjoy.
