

Quesadillas are very versatile, so many variations of ingredients and flavors! This version is super simple to make and tastes amazing! Great as a snack or an entrée.
Ingredients
- 2 cans Bush’s Black Beans 15 oz, well drained
1/2 cup Red Gold Mild Salsa 15.5 oz
1 can Red Gold Canned Petite Diced Tomatoes 14.5 oz, well drained
- 1 can green chilies 4 oz, diced
- 8 Mission Carb Balance Soft Taco Flour Tortillas, 8 inch
- 2 cups Colby jack cheese, shredded
- 1/3 cup sour cream
Instructions
Step one
Mash one can of Bush’s Black Beans.
Step two
Mix in remaining can of Bush’s Black Beans, Red Gold Salsa, drained Red Gold Petite Diced Tomatoes, and can of green chilies.
Step three
Spread mixture evenly over four Mission Carb Balance Soft Taco Flour Tortillas, top each with 1/2 cup of shredded cheese, cover with remaining flour tortillas.
Step four
Heat skillet and cook quesadillas 1-2 minutes until golden brown, flip and cook on other side another 1-2 minutes.
Step five
Cut into wedges, serve with additional salsa and sour cream on the side.
