Quesadillas are very versatile, so many variations of ingredients and flavors! This version is super simple to make and tastes amazing! Great as a snack or an entrée.

2 cans (15 oz) Bush's Black Beans, well drained1/2 cup Red Gold® Mild Salsa 15.5 oz1 can Red Gold® Petite Diced Tomatoes 14.5 oz, well drained1 (4 ounce) can green chilies, diced8 (8 inch) Mission flour tortillas2 cups Colby jack cheese, shredded1/3 cup sour cream
Instructions
- Mash one can of beans
- Mix in remaining can of beans, salsa, drained tomatoes and green chilies
- Spread mixture evenly over four tortillas, top each with 1/2 cup of shredded cheese, cover with remaining tortillas
- Heat skillet and cook quesadillas 1-2 minutes until golden brown, flip and cook on other side another 1-2 minutes
- Cut into wedges, serve with additional salsa and sour cream on the side
