Zucchini Sausage Tortellini

This five ingredient dish is simple to make and easy to love. Spicy slices of Italian sausage intermixed with fresh zucchini and cheesy tortellini, make it a quick, yet favorite dish. Serve it with fresh bread and creamy butter.

Ingredients

  • 1 (18 ounce) package three cheese tortellini
  • 1 pound Italian sausage, sliced
  • 1 zucchini, cut into 1/4 inch rounds
  • 1 (28 ounce) can Tuttorosso® Peeled Plum Tomatoes 28 oz, drained and chopped

  • Salt and black pepper to taste
  • 1/4 teaspoon sugar

Instructions

Step one

Prepare pasta according to package directions; drain well.

Step two

In a large skillet brown Italian sausage; remove and set aside. In same skillet, stir in zucchini and sauté until golden on both sides.

Step three

Stir in tomatoes, salt, black pepper and sugar. Add sausage to skillet. Bring to a boil, reduce heat and simmer for 8 minutes, stirring occasionally.

Step four

Toss with hot pasta and serve immediately.
