

This light, crowd-pleasing appetizer is an easy to make creamy dip. Made using a few simple ingredients, including fresh herbs, our Diced Tomatoes Basil, Garlic & Oregano, and quality olive oil. Serve this savory dip with crackers, crostini or cut vegetables for your next gathering.
Ingredients
- 1 (15 ounce) carton ricotta cheese, whole milk variety
- 2 tablespoons extra virgin olive oil, plus more for drizzling
- 1/4 cup Fresh herbs of choice, minced, we used a blend of basil, rosermary and thyme
- Kosher salt and freshly ground black pepper to taste
- 1 (14.5 ounce) can Tuttorosso® Diced Tomatoes Basil, Garlic & Oregano, well-drained
Instructions
Step one
Place a platter or large shallow bowl in refrigerator or freezer to chill for 15-20 minutes.
Step two
In a medium to large bowl, whip the ricotta with olive oil for 2 minutes or until fluffy. You can do this using a hand mixer or sturdy whisk. Fold in the minced herbs and season with salt and pepper. Taste and adjust salt and pepper to taste.
Step three
Spoon the seasoned ricotta onto the chilled platter or bowl and make a shallow well in the center of the cheese using a spoon. Spoon the drained diced tomatoes into the well. Drizzle the top with more olive oil and serve with toasted bread, crackers or cut vegetables.
