Ingredients
- 3 tablespoons olive oil
- 1 pound ground turkey
- 1 small onion, coarsely chopped
- 1 tablespoon garlic, chopped
- 1/2 cup roasted red peppers, chopped
- 1/2 cup chopped celery
- 1/2 cup shredded carrots
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon sugar
- 1 teaspoon dried oregano
- 2 tablespoons ancho chili powder
- 1 teaspoon cumin
- 1 (14.5 ounce) can Tuttorosso® Petite Diced Tomatoes
- 1 (15 ounce) can Tuttorosso® Crushed Tomatoes with basil
- 1/2 cup water
- 1 (15 ounce) can black beans, drained and rinsed
- 1 1/2 teaspoon salt
- Ground black pepper to taste
Instructions
Step one
Heat olive oil over medium heat in a large, heavy sauce pan. Add the ground turkey. Cook about 5 minutes breaking up the meat as you brown with a spatula or spoon.
Step two
Add the onions, garlic, celery, carrot, red pepper, oregano, ancho chili powder, and cumin. Stir to combine. Cook for 5 minutes. Add the petite diced tomatoes, crushed tomatoes, salt and pepper. Bring to a boil, cover and reduce heat to a simmer and cook, stirring occasionally for 20 minutes.
Step three
Add the black beans and cook an additional 10 minutes.
Step four
Serve with fresh chopped cilantro, sour cream and cheese if desired.
