This light, crowd-pleasing pasta salad combines cheesy tortellini with fresh greens, mushrooms and diced tomatoes coated in a garlic-onion vinaigrette. It’s a no-fuss, all-flavor side dish.
Ingredients
- 1 (9 ounce) package cheese tortellini
- 1 (16 ounce) bag mixed greens
- 1 1/2 cups sliced fresh mushrooms
1 (28 ounce) can Tuttorosso® Diced Tomatoes 28 oz, drained
- 1/2 cup garlic onion vinaigrette
- 1/2 cup seasoned croutons
Instructions
Step one
Cook tortellini according to package directions. Drain and rinse with cold water.
Step two
In a large bowl, combine tortellini, greens, mushrooms and diced tomatoes. Pour dressing over tortellini mixture; toss to coat.
Step three
Top with croutons just before serving.
