Tomato Onion Gnocchi

Filling and unforgettable, gnocchi is an Italian favorite for a reason. This special iteration of the classic dish brings out the flavors of pancetta, peeled plum tomatoes and fresh garlic.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 5 ounces pancetta, finely chopped
  • 1 large red onion, finely chopped
  • 1 garlic clove, minced
  • 1 (28 ounce) can Tuttorosso® Peeled Plum Tomatoes, chopped
  • 1/2 cup water
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • 1 box potato gnocchi, prepared according to package directions or 1 bog frozen potato gnocchi prepared accounding to package directions

Instructions

Step one

Heat the oil in a large saucepan over medium high heat until hot. Add pancetta and onion, stirring until onion is golden brown, about 6 minutes.

Step two

Add garlic and sauté until golden, about 1 minute.

Step three

Add tomatoes with juice, water, sugar, salt and black pepper. Simmer, uncovered, stirring occasionally, until thickened, about 30 minutes.

Step four

Place prepared gnocchi in serving bowl and spoon sauce on top.

Step five

Option: sprinkle with Parmesan cheese and chopped fresh parsley before serving.
