Sheet Pan Shrimp Fajitas

Sheet pan meals are great thanks to hands-off cooking and little clean up. You won’t believe how easy it is to make this popular restaurant dish! Fajitas are full of flavor thanks to a seasoning mix made using spices you likely have on hand. Grab some chips and salsa, pour yourself a margarita and you’ll feel like you’re at your favorite cantina! If you like to meal prep, have all of the vegetables cut and the seasoning mix ready for a meal ready in under 30 minutes! Enjoy these in warmed tortillas or as a fajita bowl over rice or cauliflower “rice” which is also delicious!

Ingredients

  • 1 1/2 pounds shrimp, medium size, uncooked, tails and shells removed, deveined
  • 3 medium bell peppers, colors of choice, sliced
  • 1 medium red onion, thinly sliced
  • 1 (28 ounce) can Tuttorosso® Peeled Plum Tomatoes, drained and cut into quarters
  • 2 tablespoons olive oil
  • Fajita Seasoning
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ancho chili powder
  • 1/2 teaspoon dried oregano, Mexican if you have
  • 1/4 teaspoon freshly ground black pepper
  • corn tortillas

Instructions

Step one

Preheat oven to 400ºF for 10 minutes. Line a sheet pan with heavy-duty foil and place in oven while it preheats.

Step two

In a small bowl, combine the fajita seasonings and mix well to combine.

Step three

In a large bowl add the onions, bell peppers, and tomatoes; drizzle with 1 tablespoon of olive oil and sprinkle with 1 tablespoon of the fajita seasoning. Toss the vegetables to coat with the seasoning and oil.

Step four

Carefully remove the sheet tray from the oven and arrange the vegetables in a single layer. Bake for 10 minutes.While vegetables cook, prep the shrimp.

Step five

In the same large bowl combine the shrimp, 1 tablespoon of olive oil, and the remaining fajita seasoning mix and toss well. Set aside.

Step six

After the vegetables finish cooking, remove and toss them gently and put back in a single layer. Evenly place the shrimp evenly over the vegetables. Place the pan back in the oven and cook for about 6-8 minutes, just until shrimp are opaque and cooked through.

Step seven

Warm tortillas in a skillet or in the microwave. Serve fajitas with sour cream, guacamole, lime wedges, fresh cilantro and any other garnishes you like. Our Easy Blender Salsa would be a fresh topping to these fajitas!
