Cheesy tortellini and hot Italian sausage harmoniously intermingle in this soup. They work together to make this recipe hearty, flavorful and super satisfying, especially on a chilly evening.
Ingredients
- 1 pound Italian sausage
- 1 onion, chopped
- 1 clove garlic, crushed
- 4 cups chicken broth
1 (28 ounce) can Tuttorosso® San Marzano Style Chopped Tomatoes in Puree with Garlic, Basil Olive Oil & Sea Salt 28 oz, or 1 (28 ounce) can Tuttorosso® Diced Tomatoes 28 oz
- 2 (15 ounce) carton cannellini beans, or great northern beans
- 1 teaspoon dried oregano, crushed
- 1/2 teaspoon dried marjoram, crushed
- 1/4 teaspoon crushed red pepper
- 1 package refrigerated cheese-filled tortellini, cooked
- 3 tablespoons chopped fresh parsley
Instructions
Step one
In a large saucepan brown sausage. Stir in onion and garlic; cook until onion is soft, about 3 minutes. Drain off excess fat.
Step two
Stir in chicken broth, chopped tomatoes, beans, oregano, marjoram, red pepper and pasta; bring to a boil. Lower heat and simmer for 15 to 20 minutes.
Step three
Sprinkle with parsley on top of each serving
