
Pizza Potato Skins

Hollowed out potatoes are filled with Tuttorosso Crushed Tomatoes and mozzarella cheese, then baked until gooey and warm. 1 Tuttorosso Crushed Tomatoes with basil 28 oz
Wash the potatoes to remove excess dirt. Pat dry, then coat with olive oil and lightly salt.
Bake on 400°F for 1 hour or until soft in the center.
Let the potatoes cool for 15 minutes, then slice into wedges and scoop out the flesh of the potato, leaving the skins.
Layer the potato skins with the crushed tomatoes, then top with mozzarella cheese.
Bake in the oven for 5-minutes, then broil until golden, watching closely to avoid burning them. Remove from the oven, and top with chives (optional).
