Lentil Bolognese

This bolognese is so delicious you won’t miss the meat.  A meatless version perfect for vegetarians and simple to make.  Saute onions with a few vegetables, pour in tomatoes and tomato sauce along with seasoning, simmer and enjoy!

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 small yellow onion, finely chopped
  • 2 carrots, finely chopped
  • 1/2 cup finely chopped celery
  • 1 red bell pepper, finely chopped
  • 4 garlic cloves, minced
  • 1 chopped fresh basil
  • 1 bay leaf
  • 3/4 cup lentils, rinsed and drained
  • 2 tablespoons chopped fresh oregano
  • 1 teaspoon red chili flakes
  • 1 (14.5 ounce) can Tuttorosso® Diced Tomatoes
  • 3 tablespoons Tuttorosso® Tomato Paste
  • 1 (15 ounce) can Tuttorosso® Tomato Sauce
  • 2 1/2 cups water
  • Sea salt and ground black pepper to taste
  • 1 (16 ounce) box Penne pasta, cooked according to package directions
  • 1 cup Parmesan cheese, grated

Instructions

Step one

In a large pot, heat the olive oil over medium heat.  Add the onions, celery, carrots, bell pepper and garlic, cook for 10 minutes.  Add the basil, bay leaf, lentils, oregano, chili flakes, tomato paste, diced tomatoes, tomato sauce and water.  Bring to a boil and reduce heat to simmer for 40 minutes.  Taste and season with salt and pepper as needed.

Step two

Serve over Penne and garnish with Parmesan.
