Bruschetta is practically garlic bread; warm and crisp on its own, but made even better with a flavorful topping. Try this fresh basil, garlic and diced tomato mixture with fresh Parmesan for a light, fresh version.
Ingredients
- 1 loaf sourdough bread, or Italian bread, cut into 1 inch slices
- 4 tablespoons extra virgin olive oil
- 2 (14.5 ounce) cans Tuttorosso® Diced Tomatoes Basil, Garlic & Oregano, or 1 (28 ounce) can Diced Tomatoes, drained
- 4 tablespoons fresh chopped basil
- Salt and black pepper to taste
- 1 cup grated Parmesan cheese
Instructions
Step one
Brush bread slices with olive oil and broil on each side until toasted. In a small bowl combine the remaining ingredients, except cheese.
Step two
Spoon tomato mixture onto the toasted bread and sprinkle with cheese. Place under the broiler for 1 to 2 minutes to melt the cheese. Serve warm.
