Ingredients
1 can Tuttorosso San Marzano Style Whole Peeled Pear Tomatoes with Basil & Sea Salt 28 oz
- 1 medium onion, peeled and halved
- 5 tablespoons unsalted butter
- Kosher salt, to taste
- 8 ounces spaghetti
- fresh basil leaves, for serving
- freshly grated Parmigiano Reggiano, for serving
Instructions
Step one
Pour the tomatoes and their juices into a large saucepan. Crush the tomatoes gently by hand or with a spoon.
Step two
Add the halved onion, butter, and a pinch of salt. Bring to a gentle simmer over medium heat, then reduce to low.
Step three
Simmer uncovered for 40 to 45 minutes, stirring occasionally, until the sauce thickens and the butter fully incorporates.
Step four
Meanwhile, bring a large pot of water to a boil. Salt generously and cook spaghetti until al dente. Reserve 1 cup of pasta water before draining.
Step five
Remove and discard the onion from the sauce. Taste and adjust salt as needed.
Step six
Add cooked pasta to the sauce and toss to coat, adding splashes of reserved pasta water as needed to loosen and emulsify.
Step seven
Serve topped with fresh basil and freshly grated Parmigiano Reggiano.
