This Creamy Tomato Butter Chicken Lasagna combines the bold, spiced flavors of classic butter chicken with the comforting layers of lasagna. Ingredients

  • 1 1/2 pounds boneless, skinless chicken thighs, diced
  • 1 cup Greek yogurt
  • 2 teaspoons garam masala, divided
  • 2 teaspoons paprika, divided
  • 2 teaspoons cumin, divided
  • 2 teaspoons turmeric, divided
  • 2 teaspoons kosher salt, divided
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons Tomato Paste with Sweet Basil 6 oz

  • 2 cups Tomato Sauce Italian Style with Basil, Garlic & Olive Oil 28 oz

  • 1 cup coconut milk or cream
  • 9 oven-ready lasagna noodles
  • 2 cups shredded mozzarella cheese

Instructions

Step one

In a large bowl, combine diced chicken with Greek yogurt and 1 teaspoon each of garam masala, paprika, cumin, turmeric, and salt. Mix well and refrigerate for at least 30 minutes.

Step two

Heat a large pan over medium heat. Add chicken and cook for 6–8 minutes until browned and cooked through. Remove and set aside.

Step three

In the same pan, heat olive oil and sauté garlic for 30 seconds. Add the remaining 1 teaspoon of each spice, then stir in the Tuttorosso tomato paste and tomato sauce. Simmer for 10 minutes. Stir in coconut milk and cooked chicken, and cook for another 5 minutes.

Step four

Grease a 9×13-inch baking dish. Layer with chicken mixture, then lasagna noodles, and sprinkle with mozzarella. Repeat until all ingredients are used, finishing with a layer of mozzarella on top.

Step five

Cover with foil and bake at 350°F for 30 minutes. Remove foil and broil for 5 minutes until the cheese is golden brown. Let rest for 10 minutes before slicing.
