Chicken Cacciatore

Our savory version of Chicken Cacciatore uses legs and thighs and a bit of tomato for roasted goodness.

Ingredients

  • 1 whole chicken, or legs and thighs, cut into pieces
  • 1 teaspoon extra virgin olive oil
  • 1/4 cup chopped green onions
  • 1 (28 ounce) can Tuttorosso® Crushed Tomatoes with basil 28 oz

  • 2 cups sliced fresh mushrooms
  • 1 medium green bell pepper, chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions

Step one

Using a 10-inch skillet, lightly brown chicken pieces in oil over medium heat.

Step two

Add crushed tomatoes with basil, mushrooms, garlic, pepper and oregano. Stir to blend.

Step three

Return chicken pieces to skillet and simmer, covered for 30 to 40 minutes. Serve over cooked vermicelli or spaghetti.
