Even the most skeptical vegetable critics want to give these warm, cheesy, broccoli stuffed tomato halves a try. They make excellent utensil-free apps or an unexpected side dish. And if you’re not a broccoli fan, try making the recipe with spinach instead.
Ingredients
- 2 cups fresh broccoli flowerets, or chopped spinach
- 2 tablespoons extra virgin olive oil
- 1/2 cup finely chopped onion
- 1 garlic clove, minced
- 1 teaspoon water
- 1 cup (4 ounces) shredded mozzarella cheese
- 1 (28 ounce) can Tuttorosso® Peeled Plum Tomatoes, drained
- Salt and black pepper to taste
Instructions
Step one
Lightly blanch broccoli then roughly chop.
Step two
In a skillet, sauté onion and garlic in olive oil just until fragrant. Add 2/3 cup of cheese and broccoli. Cook 2-3 minutes to soften cheese.
Step three
Cut tomatoes in half horizontally. Arrange cut side up in an 8-inch round baking dish.; Sprinkle with salt and pepper to taste.
Step four
Spoon vegetable mixture evenly over tomato halves. Sprinkle with remaining cheese.
Step five
Cook in microwave on HIGH 4 to 5 minutes or until heated through.
