With lean beef, tomatoes and herbs, start this hearty soup early in the morning and let it cook all day in a crock pot for maximum flavor.
Ingredients
- 1 pound lean beef, cut into small cubes
- 1 onion, chopped
- 2 tablespoons extra virgin olive oil
- 1 (28 ounce) can Tuttorosso® Crushed Tomatoes with basil
- 2 (14.5 ounce) cans chicken broth
- 2 (10 ounce) bags frozen mixed vegetables
- 1/2 cup quick cooking barley
- 1 tablespoon dried thyme
- 1 tablespoon chili powder
- 1 tablespoon garlic powder
- 2 cups water, or enough to fill crock pot
Instructions
Step one
In a skillet brown beef cubes and onions in oil. Place in a 6 quart crock pot and add crushed tomatoes, and chicken broth.
Step two
Stir to combine. Add vegetables, barley, thyme, chili powder and garlic powder. Add water to within 1 inch of the rim. Cook on High for 4 or Low for 6 hours.
