Ingredients
2 cans Red Gold Original Diced Tomatoes + Green Chilies 10 oz
- 1/2 yellow large onion, diced
- 5 cloves garlic, minced
- 2 tbsp chili powder
- 2 tsp cumin
- 2 tsp smoked paprika
- 1 tsp oregano
- 1 cup beef broth
- 2.5 pounds shredded smoked beef (chuck, brisket, or leftovers)
- 20 oz Velveeta, cubed
- 12 oz Oaxaca cheese, cubed or shredded
- salt and pepper to taste

Instructions
Step one
Preheat smoker or grill to 275-300°F. Place a large cast iron skillet or foil pan on the grill. Add both cans of Red Gold Diced Tomatoes + Green chilies, onions, garlic, spices and beef broth. Let simmer 15-20 minutes stirring occasionally.
Step two
Add in the shredded smoked beef and mix well. Drop in both cheeses. Stir every few minuews untill fully melted and smooth. Taste and adjust seasoning as needed.
Step three
For an added touch, garnish with fresh cilantro, a squeeze of lime, extra shredded beef and diced tomatoes. Serve with torrillia chips
