Roasted Tomatillo Salsa with Tomatoes

A bright flavored green salsa made with roasted tomatillos and vine-ripened Tuttorosso Petite Diced tomatoes for texture and fresh flavor. This vibrant sauce is a great dip for tortilla chips, served as a salsa with tacos, or alongside roasted chicken.

Ingredients

  • 1 pound tomatillos, husks removed and rinsed under cool water to remove stickiness
  • 1 onion, peeld and cut into quarters
  • 3 garlic cloves, peeled
  • 1 serrano chili
  • 3 tablespoons olive oil
  • 1/2 cup fresh cilantro, chopped
  • 1 (14.5 ounce) can Tuttorosso® Petite Diced Tomatoes, drained
  • 3 tablespoons lime juice
  • salt and freshly ground black pepper

Instructions

Step one

Preheat oven to 350º F

Step two

Line a baking sheet with aluminum foil and parchment paper (for easy clean up). Place the tomatillos, onions, 2 cloves of garlic, and serrano chili; toss with olive oil. Place in the oven and roast for 12 minutes.

Step three

Place the vegetables and the remaining garlic clove into a blender or food processor and blend for 1 minute.

Step four

Pour into a medium bowl and add the petite diced tomatoes, lime juice, cilantro, and season with salt and pepper. Taste and adjust seasoning as needed.
