

When you need to impress your dinner guests, whip out this recipe. Juicy pork chops soak up this expertly seasoned tomato relish. Its garlic, basil, oregano and onion flavors compliment the pork perfectly.
Ingredients
1 (28 ounce) can Tuttorosso® Peeled Plum Tomatoes 28 oz, drained and chopped
- 3/4 cup chopped red onion
- 1/4 cup red wine vinegar
- 2 tablespoons extra virgin olive oil
- 2 garlic cloves, minced
- 1 tablespoon fresh chopped basil
- 1 tablespoon fresh chopped oregano
- Salt and black pepper to taste
- 4 center cut pork chops, 3/4 inch to 1 inch thick or chicken breast or fish fillets
Instructions
Step one
Combine first seven (7) ingredients in a small bowl to make relish. Season with salt and black pepper. Let stand for at least 15 minutes or up to 1 hour.
Step two
Arrange meat in baking dish. Drain liquid from relish and spoon over pork chops. Allow meat to marinate at least 15 minutes turning occasionally.
Step three
Preheat barbecue grill or grill pan over medium heat. Grill or braise meat until cooked through (internal temperature of 145º).
Step four
Transfer meat to plates and top with relish. Serve immediately.
