Ingredients

  • Kosher salt, as needed
  • 1 pound rigatoni pasta
  • 2 tablespoon olive oil
  • 1 1/2 pounds chicken breast, cut into 1 1/2-inch pieces
  • 1 teaspoon garlic powder
  • Freshly ground black pepper, as needed
  • 1 shallot, minced
  • 1 red bell pepper, thinly sliced
  • 4 garlic cloves, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup plain vodka
  • 1 can Tuttorosso San Marzano Style Hand Crushed™ Tomatoes in Puree with Basil & Sea Salt 28 oz
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Reserved pasta water, as needed
  • Thinly sliced basil, for garnish
  • Shredded Parmesan cheese, for garnish

Instructions

Step one

Bring a large pot of salted water to a boil and cook rigatoni until al dente. Reserve some pasta water before draining.

Step two

Heat olive oil in a large skillet over medium-low heat. Add chicken, season with garlic powder, salt, and pepper, and cook for 8–10 minutes, flipping halfway, until cooked through. Remove from skillet and set aside.

Step three

  • Add shallots and red bell pepper to the skillet and cook for 2 minutes. Add garlic, crushed red pepper flakes, and vodka. Allow vodka to reduce for 2–3 minutes.

Step four

  • Stir in Tuttorosso San Marzano Style Hand Crushed Tomatoes and Italian seasoning. Bring to a simmer, reduce heat to low, and cook for 10 minutes, stirring occasionally.

Step five

  • Stir in heavy cream and grated Parmesan cheese. Add cooked chicken back to the skillet and let the sauce simmer for 5 minutes.

Step six

  • Add cooked rigatoni to the sauce, tossing until evenly coated. Add reserved pasta water 1 tablespoon at a time if needed to thin the sauce to your desired consistency.

Step seven

  • Plate immediately and garnish with thinly sliced basil and shredded Parmesan cheese.
