Ingredients

  • 1/3 cup crumbled feta cheese
  • 1 cup cottage cheese
  • 1 teaspoon olive oil
  • 1 tablespoon lemon juice
  • 5 or 6 cloves minced garlic, divided
  • Kosher salt and freshly ground black pepper to taste
  • 1 (14.5 ounce) can Tuttorosso® Petite Diced Tomatoes, drained
  • 3 tablespoons basil leaves, freshly chopped
  • 1 tablespoon balsamic vinegar
  • balsamic glaze, optional for serving

Instructions

Step one

Make the Base: In a food processor, combine feta, cottage cheese, olive oil, lemon juice, garlic, salt, and pepper. Blend until smooth and creamy.

Step two

Make the Tomato Mixture: In a small bowl, mix together the Tuttorosso® Petite Diced Tomatoes, garlic, basil, balsamic vinegar, salt, and pepper.

Step three

Assemble: Spoon the tomato mixture over the whipped feta and cottage cheese base. Drizzle with balsamic glaze, if using.
