Plump shrimp, crunchy walnuts, fresh raspberries, mango and crisp greens add color, flavor and texture to this refreshing, protein-packed salad.
Ingredients
- 1/2 cup thinly sliced red onion
- 1 (10 ounce) bag salad greens
- 2 cups grilled shrimp, or frozen cooked shrimp, thawed
- 1 mango, peeled and diced
1 (28 ounce) can Tuttorosso® Diced Tomatoes 28 oz, rinsed and drained
- 1/2 cup raspberry walnut vinaigrette
- 1 cup fresh raspberries
- 1/2 cup chopped walnuts, toasted
Instructions
Step one
In a large salad bowl lightly toss onion, greens, shrimp, mango and diced tomatoes with half of the vinaigrette.
Step two
Place salad on a serving plate and top with the raspberries and walnuts. Serve remaining dressing on the side.
Step three
Suggestion: Place shrimp on wooden skewers and grill just long enough to put grill marks on the shrimp.
