Ingredients
- 2 cups olive oil
- 1 strip orange peel
- 4 large garlic cloves, peeled and crushed
- 1 bay leaf
- 3 sprigs fresh rosemary
- 1 teaspoon chili flakes (optional)
1 can Tuttorosso Diced Tomatoes 14.5 oz, drained
- 8 ounces Fontina cheese, cubed
- 8 ounces Asiago cheese, cubed
- 1 1/2 cups pitted Castelvetrano olives
- Crostini or crackers, (gluten-free, if necessary) for serving
Instructions
Step one
Heat the olive oil with the orange peel, garlic cloves, bay leaf, rosemary, and chili flakes in a medium saucepan over medium heat until it starts to sizzle. Add the drained diced tomatoes and stir until just heated through. Allow to cool completely.
Step two
Add the cubed cheeses and the olives to a tall jar (or a large container with a tight fitting lid). Pour the cooled marinade over top. Cover and shake vigorously to combine.
Step 3
Allow mixture to marinate for at least 30 minutes (transfer to the refrigerator if marinating longer, up the 24 hours). If the oil has solidified, leave the jar at room temperature until liquid.
Step 3
Serve the marinated cheese with crostini or crackers and enjoy.
