Tomatoes, basil and mozzarella just go together. This combination is what makes caprese salad a classic. Our version features diced tomatoes, fresh mozzarella, fresh basil, vinaigrette and tastes flawlessly light.
Ingredients
- 1 (28 ounce) can Tuttorosso® Diced Tomatoes, drained
- 1 pound fresh mozzarella cheese, sliced
- 4 cups chopped fresh baby spinach leaves, or baby arugula
- 1 1/2 teaspoons kosher salt
- 1/2 red onion, sliced thin
- 1/2 cup chopped fresh basil
- 1/2 cup Balsamic vinaigrette, already prepared or bottled salad dressing
Instructions
Step one
In a large serving bowl, toss together diced tomatoes, cheese, spinach, salt, red onion, and basil.
Step two
Pour vinaigrette over salad when ready to serve and toss. Serve with toasted Italian bread for a delightful summer meal.
Step three
Top with chopped fresh basil before serving.
