This veggie fry board is the perfect way to turn fries into a more wholesome snack. Crispy sweet potato fries and parmesan zucchini fries, with plenty of Red Gold Ketchup for dipping. Perfect after school, movie night or as an easy side dish. @livelaughcook

Ingredients

  • SWEET POTATO FRIES
  • 2 large sweet potatoes
  • 1 tbps avacado or olive oil
  • 1 tbsp cornstarch
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • PARMESEAN ZUCCHINI FRIES
  • 2 medium zucchini
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • avacado / olive oil spray
  • FOR DIPPING
  • Red Gold Tomato Ketchup with Real Sugar 20 oz

Instructions

Step one

Sweet Potato Fries

Preheat oven to 425F or air fryer to 400F

Sweet Potato Fries

Peel and cut sweet potatoes into thin fry shapes. You can try a wavy fry cutter for traditional fry shapes.

Toss with cornstarch fries, then oil and seasonings.

Step four

Spread in a single layer on parchment paper or in air fryer.

Step five

Bake for 23-35 minutes, flipping halfway, untill golden and crisp. If using an air fryer, this should take about 10-12 minutes but watch closely that they do not burn.

Parmesan Zucchini Fries

Cut Zucchini into fry shapes and pat dry thoroughly

Step two

Parmesan Zucchini Fries

Mix panko, parmesan, garlic powder and salt

Step three

Parmesan Zucchini Fries

Dip zucchini in egg, then coat in breadcrumb mixture

Step four

Parmesan Zucchini Fries

Place on a wire rack over a baking sheet, or in the air fryer. Spray lightly with oil.

Step five

Parmesan Zucchini Fries

Bake for 20-25 minutes, flipping once, until crisp and golden. If using an air fryer, it should take about 10-14 minutes.
