Quesadillas are very versatile, so many variations of ingredients and flavors! This version is super simple to make and tastes amazing! Great as a snack or an entrée.
Ingredients
- 2 cans (15 oz) black beans, well drained
1/2 cup Red Gold Mild Salsa 15.5 oz
1 can Red Gold Canned Petite Diced Tomatoes 14.5 oz, well drained
- 1 (4 ounce) can green chilies, diced
- 8 (8 inch) flour tortillas
- 2 cups Colby jack cheese, shredded
- 1/3 cup sour cream
Instructions
Step one
Mash one can of beans
Step two
Mix in remaining can of beans, salsa, drained tomatoes and green chilies
Step three
Spread mixture evenly over four tortillas, top each with 1/2 cup of shredded cheese, cover with remaining tortillas
Step four
Heat skillet and cook quesadillas 1-2 minutes until golden brown, flip and cook on other side another 1-2 minutes
Step five
Cut into wedges, serve with additional salsa and sour cream on the side
