Quick, light pizza with a creamy sauce. Easy to serve for a light dinner, or cut into squares for an appetizer.

Ingredients

1 (10 ounce) package refrigerator pizza crust3/4 cup light mayonnaise1/4 cup grated Parmesan cheese2 cups shredded mozzarella cheese1 garlic clove, minced2 cans Red Gold® Diced Tomatoes 14.5 oz or 1 can Red Gold® Diced Tomatoes 28 oz, drained1 green bell pepper, chopped2 tablespoons fresh basil, chopped

Instructions

  • Preheat oven to 425° F. Lightly grease 12” pizza pan or 9x13 inch pan. Unroll pizza crust and place in greased pan. Starting at center press out with hands.
  • In a small bowl combine mayonnaise, Parmesan cheese, 1 cup mozzarella cheese and garlic. Spread cheese mixture on crust. Arrange diced tomatoes in a single layer over cheese.
  • Sprinkle green bell pepper and remaining Mozzarella cheese over tomatoes. Bake 12 to 15 minutes or until the crust is golden brown. Just before serving sprinkle with fresh basil.
