Garbanzo Bean Salad

A fresh and zesty salad. Garbanzo beans and pepperoni give this pasta salad a kick. Rounded out by fresh herbs like basil and parsley, it not only tastes delicious, it’s a real showstopper to serve.

Ingredients

  • 2 (14.5 ounce) cans garbanzo beans, rinsed and drained
  • 1 (28 ounce) can Tuttorosso® Diced Tomatoes, drained
  • 2/3 cup chopped pepperoni, or chopped turkey pepperoni
  • 1 cup grated Parmesan cheese
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon lemon zest
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons chopped flat leaf parsley
  • 2 tablespoons chopped fresh basil
  • Kosher salt and freshly ground black pepper to taste

Instructions

Step one

Combine all ingredients in a large mixing bowl; stir to combine. Cover and refrigerate overnight or for at least one hour to blend flavors.
