

There’s a reason Chicken Parmesan is an Italian favorite: it’s savory, flavorful and super cheesy. This spicy version encapsulates all of this with its 4C Spicy Panko Bread Crumbs, blend of spices and unforgettable tomato-based sauce made with Tuttorosso San Marzano Hand Crushed Tomatoes.
Ingredients
- 4 tablespoons extra virgin olive oil
- 4 garlic cloves, minced
- 3 shallots, peeled and chopped
1 can Tuttorosso San Marzano Style Hand Crushed Tomatoes in Puree with Basil & Sea Salt 28 oz
- 2 teaspoons dried oregano
- 3 tablespoons chopped fresh parsley
- 1/4 teaspoon crushed red pepper
- 1/2 cup chopped fresh basil
- salt & pepper to taste
- 3/4 cup 4C Spicy Panko Bread Crumbs
- 3/4 cup 4C HomeStyle Parmesan Cheese
- 1 cup flour
- 2 eggs, beaten
- 6 boneless skinless chicken breast halves
- 3/4 cup shredded mozzarella cheese
Instructions
Step one
In large saucepan heat 2 tablespoons oil over medium heat. Add garlic and shallots; sauté until tender. Add Tuttorosso San Marzano Hand Crushed Tomatoes, parsley, oregano and crushed red pepper. Simmer until sauce thickens, about 10 minutes. Mix in basil and season with salt and black pepper.
Step two
Blend 4C Spicy Panko Bread Crumbs and 4C HomeStyle Parmesan Cheese in small bowl. Place flour and eggs in separate shallow bowls. Coat the chicken with flour, then eggs, then bread crumb mixture, patting to adhere.
Step three
Heat remaining 2 tablespoons of oil in large nonstick skillet over medium-high heat. Add chicken and sauté until golden brown, about 4 minutes per side, until no longer pink. Spoon ¼ cup of sauce over each chicken breast, sprinkle with mozzarella cheese. Preheat broiler for 5 minutes. Place skillet under broiler to melt cheese. Re-warm remaining sauce and serve with chicken. Garnish with fresh basil leaves.
