These Smashburger Party Bites are everything you love about a crispy-edged smashburger, but made mini, snackable, and party-ready. Each bite gets melty pepper jack cheese, crispy bacon, pickles, and a sweet-tangy BBQ sauce made with Red Gold Folds of Honor Ketchup. @kdamitz (6/30/26)

Ingredients

  • SWEET-TANGY BBQ SAUCE
  • 3/4 cup Red Gold 32 oz Ketchup Folds of Honor

  • ½ cup BBQ sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon freshly ground black pepper
  • SMASHBURGERS
  • 1 1/2 pounds ground beef
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 12 slider buns
  • 6 slices pepper Jack cheese, cut into quarters
  • 8 to 10 slices bacon, cooked until crisp and chopped
  • ½ cup chopped pickles or pickle chips
  • Red Gold 32 oz Ketchup Folds of Honor, for serving

Instructions

Step one

Preheat the oven to 425°F. Lightly grease a large baking sheet or line it with parchment paper. These can also be grilled if preferred.

Step two

In a small saucepan, combine the ketchup, BBQ sauce, brown sugar, honey, apple cider vinegar, Dijon mustard, Worcestershire sauce, onion powder, garlic powder, smoked paprika, and black pepper. Stir together and warm over low heat for 5 to 7 minutes, stirring occasionally, until smooth and glossy. Remove from the heat and set aside.

Step three

Divide the ground beef into 12 equal portions and roll each portion into a ball.

Step four

Place each beef ball between pieces of wax paper and flatten into thin patties using a heavy cup. Sprinkle both sides of the patties with the kosher salt, black pepper, garlic powder, and onion powder.

Step five

Place the patties on the prepared baking sheet. Bake for 15 minutes, flipping halfway through, until browned and cooked through.

Step six

Top each patty with cheese and broil for about 1 minute, or just until the cheese is melted. Keep a close eye on them so they don’t over-brown.

Step seven

Place each mini burger on a slider bun. Top with the chopped bacon, pickles, and a spoonful of the sweet-tangy BBQ sauce. Serve warm with extra ketchup or extra BBQ sauce on the side for dipping.
