My Grandparents’ Sunday Gravy

This Sunday gravy is a family recipe passed down from my great-grandparents, who made it every single week. Slow-simmered and deeply savory, this classic Italian-American tomato sauce is packed with sausage, pork ribs, herbs, and rich tomato flavor. Step one

Heat olive oil over medium heat in a large heavy-bottomed pot or Dutch oven.

Step two

Season the sausage and pork ribs generously with salt and pepper. Working in batches, brown the meat on all sides. Remove and set aside.

Step three

In the same pot, add the diced onion and sauté for about 1 to 2 minutes, until softened.

Step four

Add the minced garlic and cook for 1 minute, until fragrant. Season with salt and pepper. Return the browned meat to the pot.

Step five

Add the Tuttorosso San Marzano Style Hand Crushed Tomatoes in Puree with Basil & Sea Salt, Tuttorosso San Marzano Style Chopped Tomatoes in Puree with Sea Salt, and Tuttorosso Tomato Paste with Sweet Basil. Stir in the sugar, oregano, and Italian seasoning.

Step six

Bring to a gentle boil, then reduce the heat to low and simmer for 3 to 4 hours, stirring occasionally. Toward the end of cooking, stir in the fresh basil and parsley. Taste and adjust the seasoning as needed.

Step seven

Serve with pasta and finish with freshly grated Pecorino Romano cheese and red pepper flakes, if desired.
