Mexican Baked Eggs

Ingredients

  • 2 Cups #10 Red Gold Salsa
  • 1 Tablespoon Olive Oil
  • 1 Cup Black Beans, Rinsed and Drained
  • 6 Eggs
  • 1/2 Cup Colby Jack Cheese
  • Sour Cream
  • Green Onions
  • Flour tortillas

Instructions

Step 1

Preheat oven to 400°F.

In a medium skill add oil and heat over medium. Carefully add the salsa, it will sizzle and splatter a bit. Briskly mix with rubber spatula, add the black beans. Bring to a gentle simmer and cook for 5 minutes, to reduce and thicken.

Step 2

With the back of a spoon, make a well and crack an egg into the pocket. Repeat with remaining eggs.

Step 3

Place skillet in hot oven for 5 minutes, until eggs are starting to set but still wet. Remove from oven, turn on broiler. Top eggs with a small handful of cheese. Place under the broiler to melt 1-2 minutes.

Serve hot with sour cream, green onions and warm flour tortillas.
