Ingredients
- 2 T-Bone Steaks, cut 2/3-3/4 inch thick, well marbled Prime if available
- 2 tablespoons olive oil
2 cups Marinara Sauce, use the link in the description above to get our recipe
- 2 tablespoons butter
- dried oregano
- flaky sea salt
Instructions
Step one
Preheat two large (12″ or larger) cast iron skillets (or heavy bottom frying pans). If you don’t have 2 pans, you can do this 1 steak at a time.
Step two
Add 1 tablespoon of olive oil to the pan or each skillet. Sear the steak on the first side for 4 minutes without moving – the key is do not move the steak to get that crust!
Step three
Flip the steak and sear on the other side for 30 seconds. If it won’t move, it isn’t ready to flip. Pour 1 cup of Marinara into the pan along with 1 tablespoon of butter and baste the steak with the warm red sauce.
Step four
Remove the steaks to a serving platter and sprinkle with oregano and the crunchy salt. Mangia!
