Ingredients
- 1 head of garlic, plus 1 clove, minced
- red pepper flakes, to taste, optional
- olive oil, as needed
- Kosher salt and freshly ground black pepper to taste
- 1 baguette, toasted and sliced
- 3 tablespoons butter
- 8 ounces goat cheese, softened
- 2 tablespoons cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/2 cup basil leaves, freshly chopped, divided
- 2 (14.5 ounce) cans Tuttorosso® Diced Tomatoes
- fresh parsley, chopped, for topping
- panko bread crumbs, toasted for topping
- balsamic glaze, drizzle for topping
Instructions
Step one
Preheat oven to 400°F. Slice the top off a head of garlic, drizzle with olive oil, and sprinkle with salt and pepper.
Step two
Wrap it in foil or place in a small baking dish and cover. Roast for about 40 minutes or until the garlic is soft and caramelized.
Step three
In a bowl, add softened goat cheese, cream cheese, Parmesan, drizzle of olive oil, 1/4 cup chopped basil, red pepper flakes to taste (if using), salt and pepper to taste, mix until smooth and creamy.
Step four
Spread the mixture into an even layer in a baking dish. Bake at 400°F for 15 minutes or until the cheese starts to brown on top.
Step five
While the goat cheese bakes, combine the Tuttorosso Diced Tomatoes, 1/4 cup chopped basil, 1 minced garlic clove, drizzle of olive oil, salt, pepper and red pepper flakes to taste (if using) in a bowl. Let the mixture sit for 10-15 minutes to meld the flavors.
Step six
Once the goat cheese dip is baked, spoon the bruschetta mixture on top.
Step seven
Sprinkle with toasted panko breadcrumbs, drizzle with balsamic glaze, and garnish with chopped parsley.
Step eight
Toast the sliced baguette until golden brown. Spread butter on each slice and top with the roasted garlic.

Add a spoonful of the goat cheese dip and bruschetta to the baguette and enjoy!
