Tomato Basil Pizza

Quick, light pizza with a creamy sauce. Easy to serve for a light dinner, or cut into squares for an appetizer.

Ingredients

  • 1 (10 ounce) package refrigerator pizza crust
  • 3/4 cup light mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 garlic clove, minced
  • 1 can Redpack Canned Diced Tomatoes 28 oz

  • 1 green bell pepper, chopped
  • 2 tablespoons fresh basil, chopped

Instructions

Step one

Preheat oven to 425° F. Lightly grease 12” pizza pan or 9×13 inch pan. Unroll pizza crust and place in greased pan. Starting at center press out with hands.

Step two

In a small bowl combine mayonnaise, Parmesan cheese, 1 cup mozzarella cheese and garlic. Spread cheese mixture on crust. Arrange diced tomatoes in a single layer over cheese.

Step three

Sprinkle green bell pepper and remaining Mozzarella cheese over tomatoes. Bake 12 to 15 minutes or until the crust is golden brown. Just before serving sprinkle with fresh basil.
