Savory chicken thighs are slow cooked to perfection along with fresh vegetables and Italian seasoning. A simple recipe that requires little effort or time in the morning, ready and waiting for you when you come home after a long day.
Ingredients
- 12 boneless skinless chicken thighs, about 2 pounds
- 2 large carrots, cut into 1/2 inch slices
- 1 medium red bell pepper, chopped
- 1 cup sliced fresh mushrooms
- 4 garlic cloves, minced
- 2 tablespoons Italian seasoning
- Salt and black pepper to taste
1 can Redpack Canned Diced Tomatoes 28 oz
, drained1 can Redpack® Canned Crushed Tomato in Puree 28 oz
- 3 cups penne pasta, cooked and drained
- parmesan cheese, for garnish
- fresh Italian parsley, for garnish
Instructions
Step one
Spray slow cooker with cooking spray. Place chicken in slow cooker and top with remaining ingredients, except pasta and garnish.
Step two
Cover and cook on LOW for 6 to 8 hours. Serve chicken over pasta and garnish with parmesan cheese and parsley.
